Ingredients
  1. 1 14 oz brick tofu, firm
  2. 2 tbsp soy milk
  3. 2 tbsp tahini
  4. 2 tbsp barley malt (or honey)
  5. 2 1/2 tbsp tamari
  6. 2 1/2 tbsp apple cider vinegar
  7. agave or honey (optional)
  8. cheese cloth
Instructions
  1. Press Tofu with original spring in your TofuXpress for at least one hour.
  2. Take a metal colander with small holes and place inside a large mixing bowl. Place tofu into colander. With a large mixing spoon, smash the tofu through the colander.

  3. 2 tbsp Worcestershire Sauce (substitute Vegan)
  4. ½ cup Balsamic Vinegar
  5. 4 tbsp Dijon Mustard
  6. 2 tsp dried Oregano
  7. ¼ cup Avocado Oil (may not need entire amount)
  8. ¾ cup Grapeseed Oil
  9. 1 brick Extra Firm Tofu, Nasoya brand
  10. 2 cups Grape or Cherry Tomatoes, sliced lengthwise
  11. ¼ cup Bacon Bits (substitute Vegan)
  12. 2 Avocados
  13. 2-3 heads Boston Lettuce, rinsed and torn into large pieces.

  1. 3 to 4 cups shredded Cabbage (use a mixture of red and green Cabbages)
  2. 2 tablespoons Veggie Broth Seasoning (by ChefXpress)
  3. 1 to 2 tablespoons Grapeseed Oil (may use 2 to 3 tablespoons Water as substitute)
Instructions

  1. 2 Cucumbers, thinly sliced, with skin
  2. ½ Vidalia Onion, thinly sliced and halved
  3. Sweet Dill Dressing (see Below)
Sweet Dill Dressing
  1. ½ cup White Vinegar or Apple Cider Vinegar
  2. ¼ cup Water
  3. ¼ cup Grapeseed Oil
  4. 1 Tablespoon Lemony Dill Zip (by ChefXpress)
  5. 1 Tablespoon Pure Maple Syrup
Sweet Dill Dressing
  1. Add Vinegar, Water, and Lemony Dill Zip. Blend well. Add Oil. Blend again.
  2. (May be made in advance and stored in refrigerator). Use with Salads, Veggies, Fish, and Tofu.
For the Salad
  1. Add the sliced cucumbers and onions to a bowl, top with the Sweet Dill Dressing.

Ingredients
  1. 1 Block Firm Tofu, Drained
Instructions
  1. Place fresh Tofu in a freezer bag.
  2. Freeze tofu brick in the bag overnight. (Remember, it will turn yellowish from the freezing process)
  3. Thaw completely. Place freezer bag in a bowl of hot water to speed up the process
  4. Press in TofuXPress unit for approximately 30 minutes.
  5. Slice into desired shapes.
  6. Baste with Barbecue Sauce or favorite marinade.
  7. Grill for 15- 20 min, flipping once browned and crispy on the outside.

  1. 3 C Cooked & cooled whole wheat pasta
  2. 1/2 Package tofu (pressed overnight and cut into 1/2 inch cubes) or Baked Tofu
  3. 1/2 C Frozen spinach (thawed, pressed, and chopped)
  4. 1/2 C+ Mayo
  5. 2 Stalks celery (chopped)
  6. 1/2 C Scallions (chopped)
  7. 1/3 C Canned peas
  8. 1 T Curry paste
  9. Salt & Pepper to taste
Instructions
  1. In a large bowl combine the mayo and the curry paste, mix well.
  2. Stir in tofu, spinach, celery, scallions, peas, and pasta. Serve cold.
