Ingredients
  1. 2 cups raw whole organic Almonds
  2. 1 to 2 cups Water*
  3. Optional Sweetener to taste: (1 tsp. Honey, Agave Syrup, Maple Syrup, Sugar, or Vanilla flavoring.)
  4. TofuXpress Unit with Light Tension Spring
  5. TofuXpress Xpress Deluxe Cheesecloth
  6. Food Processor or Blender
  7. Container to store Milk
  8. Container to store Almond Meal
Preparation
  1. 2 – 4 days prior: Place Almonds in a large bowl. Completely cover Almonds with Water. Use enough Water to leave at least 3 inches of Water covering the top of the Almonds. Ingredients
  1. 1 14 oz brick tofu, firm
  2. 2 tbsp soy milk
  3. 2 tbsp tahini
  4. 2 tbsp barley malt (or honey)
  5. 2 1/2 tbsp tamari
  6. 2 1/2 tbsp apple cider vinegar
  7. agave or honey (optional)
  8. cheese cloth
Instructions
  1. Press Tofu with original spring in your TofuXpress for at least one hour.
  2. Take a metal colander with small holes and place inside a large mixing bowl. Place tofu into colander. With a large mixing spoon, smash the tofu through the colander.
  3. Mix the remaining ingredients in a small bowl until well blended. Add to the tofu and mix well.
  4. Line TofuXpress with Cheese Cloth, leaving plenty of room around the side to fold on top of TofuXpress once spread is placed inside.

Yogurt Cheese (use the Light Tension Spring #2 attachment)

This recipe uses the Light Tension Spring #2 Attachment (purchased separately)

Ingredients
  1. 2 cups yogurt
  2. Cheese cloth
Instructions
  1. Line TofuXpress with cheese cloth, leaving room on either side for later folding over the yogurt.
  2. Spoon in 2 cups of yogurt either homemade, or store-bought.
  3. Cover completely with cheese cloth and assemble TofuXpress top.
  4. Leave in fridge overnight for best results.
  5. If you really want your yogurt cheese to be super-dense, change out the Light Tension Spring Attachment and replace it with the original spring after about 4 hours of pressing.

Ingredients
  1. 1 block extra-firm tofu, pressed for 30 minutes
  2. 3 cloves garlic, peeled
  3. 2 Tbsp extra-virgin olive oil
  4. 1 Tbsp nutritional yeast
  5. 1 tsp dried oregano
  6. u00bd tsp sea salt (or to taste)
Instructions
  1. Crumble the tofu into a food processor or blender. Add all remaining ingredients.
  2. Cover and process until mostly smooth (add a splash of water if necessary). Use immediately, or transfer to a small container and refrigerate for up to a week.
  3. Yield: 6 servings.
  4. Per serving (about 1/3 cup): 114 calories, 8.1g fat (1g sat), 2.3g carbs, 1g fiber, 7.3g protein.

  1. 1 14-oz package firm tofu
  2. Fresh or dried herbs (thyme, oregano, basil, bay leaves)
  3. salt
  4. lemon zest (optional)
  5. few cloves of garlic, peeled and slightly crushed
  6. optional kalamata olives and cherry tomatoes
  7. extra virgin olive oil (good quality)

  1. 1/3 cup Light Miso
  2. 1 brick (1 lb) Soft Tofu, Nasoya brand (not Silken)
  3. u00bc cup Olive Oil
  4. 1 cup Water
  5. 1/3 cup Tahini (Krinos is a great brand)
  6. 1 tablespoon minced Garlic
  7. 1 tablespoon Nutritional Yeast
  8. 1 tablespoon Lemon Juice
  9. 5-6 sprigs fresh Oregano Leaves
  10. 5-6 sprigs fresh Basil Leaves
  11. Salt and Pepper to taste
Instructions
  1. Press soft Tofu in TofuXpress for 2 hours.
