Pressed tofu infused with the flavors of Thailand

Ingredients
  1. 2 Packages of FirmTofu
  2. 1 13 oz Can of Coconut Milk
  3. 1 8 oz Can of Tomato Sauce
  4. 1/2 C Chopped Tomato
  5. 1/2 C Chopped Sweet Red Pepper
  6. 1/4 C Chopped Parsley
  7. 1/4 C Chopped Cilantro
  8. 1 t Grated Ginger
  9. 1 T Chopped Lemon Grass
  10. 2 T Hot Peppers
  11. 1 T Chopped Kafir Lime Leaves (bruised)
Instructions
  1. Drain and press tofu in your TofuXpress for 4 hours.
  2. Over medium heat combine coconut milk, tomato sauce, tomatoes and red pepper.
  3. Let simmer for 10 minutes, stirring occasionally.
  4. Once it begins to thicken add the remaining ingredients to the pan and simmer for an additional 5 minutes, then serve over rice of noodles.

Ingredients
  1. 4 large Romaine leaves, torn into small bite-size pieces
  2. 1 stalk Celery, thinly sliced
  3. 1 brick Firm Tofu (Nasoya brand is great)
  4. 12 Nicoise Olives, halved
  5. 6-8 Cherry Tomatoes, quartered
  6. Sea Salt
  7. Fresh Cracked Pepper
Dressing
  1. 4 tablespoons Coarse Ground Mustard with whole mustard seeds (Grey Poupon is great)
  2. 3 tablespoons White Balsamic Vinegar
  3. 2 teaspoons Herbs de Provence
  4. 4-6 tablespoons Olive Oil
Instructions
  1. Press Tofu in TofuXpress for 3 hours or overnight if more convenient. Remove and slice diagonally, into thin strips.
  2. Using a fork, rake the tofu gently while in stacks of thin strips. This will create a u201ctuna-fishu201d flakey texture.

  2. 1 Tomato, chopped
  3. 1 Avocado, chopped
  4. u00bc cup Red Sweet Spanish Onion
  5. 2 tablespoons dried Cilantro or u00bc cup chopped fresh Cilantro
  6. 1 teaspoon dried Garlic Powder
  7. u00bd Orange Bell Pepper, chopped (or can use a Red Bell Pepper)
  8. 1 Habanero Pepper, finely chopped

Ingredients
  1. 2 Bricks Tofu, Firm or Extra Firm (Nasoya)
  2. 1 cup loose Basil leaves, coarsely chopped.
  3. 10-12 Campari Tomatoes (larger than Cherry Tomatoes, but smaller than regular sized Tomatoes)
  4. 1/8 cup Balsamic Vinegar
  5. 1/4 cup Olive Oil
  6. 1 tablespoon Italian seasoning spice blend (Found in spice aisle)
  7. Sea Salt
Instructions
  1. Press each Tofu brick in TofuXpress for 1 hour.
  2. Cut bricks into 12 squares. (We used the TofuXpress Tofu Cutter). This will yield 24 squares.

  1. 1 package extra firm tofu, pressed for best results
  2. 2 zucchini, sliced
  3. 1 8-oz package of crimini mushrooms, sliced
  4. 4-5 cups loosely packed spinach
  5. 1 tomato, medium sized, sliced
  6. 1-2 tablespoons of olive oil
  7. 2 cloves of garlic, minced
  8. 1 teaspoon thyme
  9. 2 teaspoons Mrs. Dash or other favorite seasoning mix (if with salt, omit salt below)
  10. salt and pepper to taste

  1. 1/2 block of extra firm tofu, drained, pressed, and cut into two slices
  2. olive oil
  3. dash of balsamic vinegar
  4. 1 small fresh italian loaf, cut into four slices
  5. 1 u2013 3 tsp butter
  6. 1 tomato, cut into slices
  7. 1/2 medium fresh mozzarella ball, sliced
  8. 4 basil leaves, shredded

Ingredients
  1. 15 oz Extra-Firm Tofu, pressed with TofuXpress for 30 minutes or more, drained, crumbled
  2. 1/4 cup nutritional yeast flakes
  3. 1 tsp Bragg’s Liquid Amino’s
  4. 1 TBS MatoZest or other tomato based no-salt seasoning
  5. 1 TBS fresh thyme (reserve 1 tsp for step 8)
  6. 1/2 TBS fresh rosemary (reserve 1/2 tsp for step 8)
  7. 1/2 tsp ground black pepper
  8. 1 onion, diced
  9. 4 oz mushrooms, diced
  10. 8 sun-dried tomatoes, diced, soaked in 1/2 cup of water for 30 minutes (reserve water for step 2)

Ingredients
  1. Xfirm tofu brick (drained with your TofuXpress)
  2. 1 Brown Onion
  3. 2 TBS Chili Powder
  4. Avocado
  5. Diced Tomatoes ( w/salt and pepper)
  6. 1/2 cup of your favorite Salsa
  7. Gouda Cheese
  8. Hand made Corn Tortillas
  9. Vegetarian Refried Beans
  10. Fresh Romaine Lettuce
Instructions
  1. Dice Brown Onion and cook in olive oil
  2. Throw in tofu after forking it (looks like scrambled eggs)
  3. Add Chili Powder, and then salsa. Line heated tortillas with sliced Gouda Cheese. Add your cooked tofu mix and top with fresh diced tomato and Avocado. Serve with a slab of beans and Enjoy:)
