Pressed Corn Salad

Let this light salad be the signature dish of your summer. It’s full of fresh corn and scallions and tangy flavor the whole family will enjoy.

Ingredients
  1. 3 Cobs uncooked Corn
  2. 3 Scallion stalks
  3. 1 tablespoon Liquid Aminos
  4. Juice from 1/2 Lime, add any pulp
  5. Slice Corn off of cob with a knife.
  6. Slice Scallions thin.
Instructions
  1. Add all ingredients into the TofuXpress and toss to coat.
  2. Press Corn mixture for 1 hour in refrigeration. Do not drain off juice! These are the nutrients that also make the marinade.
  3. When done, pour juice into bowl for serving. Add pressed corn and stir to coat.

Tofu Triangles
  1. 1 carton firm tofu, pressed
  2. 2 tablespoons peanut or sesame oil, for frying
  3. 2 scallions including the greens, thinly sliced on the diagonal
  4. 1 tablespoon toasted white or black sesame seeds
Creamy Nut Butter Sauce
  1. 1/4 cup regular soy sauce
  2. 1 tablespoon tamari
  3. 1/4 cup sesame paste, peanut butter, or cashew butter
  4. 2 tablespoons rice wine vinegar
  5. 2 tablespoons white or light brown sugar
  6. 1/2 teaspoon red pepper flakes or chili oil
  7. 2 scallions, finely chopped
  8. 1/3 cup water or stock
  9. Pinch salt
Instructions
  1. Press tofu then slice crosswise into scant 1/ 2-inch slabs, then cut each slab into 2 triangles.

Ingredients
  1. 1 brick firm Tofu
  2. 1 medium head Nappa Cabbage sliced lengthwise in quarters
  3. with core intact
  4. 4 tablespoons Hot Mustard
  5. 1 tablespoon basil-infused Olive Oil or regular Olive Oil
  6. 1 tablespoon Canola Oil
  7. 1 tablespoon Agave
  8. 1 teaspoon minced Garlic
  9. 1 large bunch Scallions, washed, trimmed, and sliced lengthwise.
  10. 1 tablespoon Water
  11. Bunch of fresh Basil
  12. Sea Salt
Instructions
  1. Mustard Glaze: Mix together Hot Mustard, basil-infused Olive Oil, Agave, Garlic, and Water. Set aside.
