Wild Rice Salad with tofu in a Sesame Soy Vinaigrette

Ingredients
  1. 3 C. cooked Brown & Wild Rice Fusion (about 1/2 a 10oz. bag)
  2. 1 (14oz) block firm tofu, pressed for at least two hours and cut into 3/4u2033 cubes
  3. olive oil spray (I use a Misto sprayer)
  4. 1/2 C. Sesame Soy Vinaigrette
  5. 1 small English cucumber, cut into 3/4u2033 pieces
  6. 1 C. grape tomatoes, halved lengthwise
  7. 1 C. cilantro leaves, loosely packed
  8. 2 green onions, sliced thinly on the bias

  1. Put the cooked rice in a medium-sized mixing bowl.

Ingredients
  1. 2 cups cooked sushi rice
  2. 2 or 3 sheets of toasted Nori
  3. Prepared Wasabi Paste
  4. 4-6 Umeboshi Plums (pit removed)
  5. Hot Chili Paste (found in stores)
  6. Peanut Satay Dipping Sauce (found in stores)
Instructions
  1. Line base of TofuXpress with 1 Nori Sheet. Allow sides to curl up. (Don’t worry if the sheet cracks – Do your best to keep it together).Add approximately 1 cup of sushi rice into Tofuxpress. Place dots of Wasabi Paste onto rice. With a fork, mix lightly to spread paste. Add Plums, spreading the plums out onto rice so as to not have one large clump of plum in one spot. Add the balance of the rice. Place another sheet of Nori onto rice mixture.

Ingredients
  1. White rice
  2. Can of apricots (or fruit of your choice)
  3. Forbidden rice
  4. Raisins
  5. Pinch of Cardamon
  6. Pinch of Mirin
Instructions
  1. Cook the rice. If your fruit is frozen fold in while the rice is hot.
  2. Put the rice with the fruit and raisins into the press and start the block.
  3. Cook the Forbidden Rice and allow to come to room temperature.
  4. Take the started block out of the fridge and put a layer of the Forbidden Rice on top.
  5. Reassemble the unit and put back in the fridge for a few hours.
  6. This is an extremely nutritious and stunningly beautiful recipe.
  7. You can do similar with rice and beans.

Ingredients
  1. u00bc cup sliced Almonds
  2. 1 cup fresh Rainier cherries, pitted, and halved
  3. 2 cups cooked White rice
  4. 2 tablespoons Mirin
  5. 2 teaspoons Almond flavor (Frontier brand, or Almond extract)
  6. 1 teaspoon water
  7. Salt
  8. Cheesecloth
Instructions
  1. Add Mirin, Almond flavor, and water into a small bowl. Stir to blend.
  2. Follow directions to cook rice. Do not cook rice till completely dry. Allow some moisture to remain so that the rice is still a bit sticky.
  3. Add almond slices and stir to allow the almonds to soften a bit (a few minutes).
  4. Add cherries and mirin mixture to pot and stir to distribute evenly. (You can add more flavoring to your taste.)

Ingredients
  1. 1 package of extra firm tofu u2013 drained REALLY well, preferably with a TofuXpress
  2. flour
  3. salt & pepper to taste
  4. 1 cup long grain white rice
  5. 1 14 oz can vegetable broth
  6. u00bc cup white wine (or water)
  7. 3 carrots
  8. 1 potato
  9. 1 medium onion
  10. 2 cloves garlic
  11. 1 cup peas
  12. 1 cup broccoli
  13. soy sauce to taste, I used about u00bd cup
  14. worcestershire sauce to taste
  15. 1/2 cup white wine or veggie broth
  16. 2 Tbsp olive oil
  17. salt & pepper to taste
Instructions
  1. Cook rice per package directions using the veggie broth & wine as the liquid.
  2. While the rice is cooking, begin preparing the pre-drained tofu. Mix the flour, salt & pepper. Dice the tofu and coat well in the flour mixture.
