Raisin and Cashew Cabbage Salad

Ingredients
  1. 1 cup Red Cabbage
  2. 1 cup Napa or other Green Cabbage
  3. 1/2 cup shredded Carrots
  4. 1/4 cup Raisins
  5. 1/4 cup Cashew pieces
  6. 1 tbsp Safflower Oil
  7. 1 tbsp Sesame Oil
  8. 2 tbsp Brown Rice Vinegar
  9. 1 tbsp Mirin (Rice cooking
  10. wine, sweet)
Instructions
  1. Combine all liquid ingredients in a large bowl and mix well. Add remaining ingredients and coat well. Place mixture into TofuXpress and allow to press for 1 hour. Add additional mixture.
