How I came to develop the TofuXpress |

Several years ago I began to incorporate more tofu in my diet as a protein source. I was frustrated with the limited ways to cook it and it’s taste and texture. I learned that pressing tofu to remove the water helped. What I could not find was a kitchen tool that did this. All of the instructions in recipe books said to put the tofu between two plates and put a weight on top!
I eventually became so curious about how to make something that might work better that I went to Lowe's and started walking the aisles for materials to build something better. And that was the start.
Since, I have been working on recipes to help others find ways to incorporate tofu, and other healthy foods, into their diet. Tofu is a great source of protein and, by using tofu as a substitute for other sources of meat protein we can conserve the amount of natural resources needed to produce our protein source. Every family that replaces 1 pound of meat for 1 pound of tofu will conserve 20,000 gallons of water per year.
The TofuXpress is great for other foods as well, such as removing the water from thawed chopped spinach, sliced eggplant, chopped onions and peppers, and for removing the water when making paneer cheese.
