  3. 1 ½ cups chopped Celery
  4. 1 cup chopped Carrot

  1. 1 12 or 14 oz. brick Firm or Extra Firm Tofu (prefer House Foods brand)
  2. 2 ½ cups Blueberries (reserve ½ cup Blueberries for finishing)
  3. ¼ cup Honey
  4. ¼ cup Red Wine
  5. 3-4 tablespoons Veggie Broth Seasoning (ChefXpress brand)

Instructions

  1. 2 Cucumbers, thinly sliced, with skin
  2. ½ Vidalia Onion, thinly sliced and halved
  3. Sweet Dill Dressing (see Below)
Sweet Dill Dressing
  1. ½ cup White Vinegar or Apple Cider Vinegar
  2. ¼ cup Water
  3. ¼ cup Grapeseed Oil
  4. 1 Tablespoon Lemony Dill Zip (by ChefXpress)
  5. 1 Tablespoon Pure Maple Syrup
Sweet Dill Dressing
  1. Add Vinegar, Water, and Lemony Dill Zip. Blend well. Add Oil. Blend again.
  2. (May be made in advance and stored in refrigerator). Use with Salads, Veggies, Fish, and Tofu.
For the Salad
  1. Add the sliced cucumbers and onions to a bowl, top with the Sweet Dill Dressing.

  1. 2 Packages of FirmTofu
  2. 1 13 oz Can of Coconut Milk
  3. 1 8 oz Can of Tomato Sauce
  4. 1/2 C Chopped Tomato
  5. 1/2 C Chopped Sweet Red Pepper
  6. 1/4 C Chopped Parsley
  7. 1/4 C Chopped Cilantro
  8. 1 t Grated Ginger
  9. 1 T Chopped Lemon Grass
  10. 2 T Hot Peppers
  11. 1 T Chopped Kafir Lime Leaves (bruised)
Instructions
  1. Drain and press tofu in your TofuXpress for 4 hours.
  2. Over medium heat combine coconut milk, tomato sauce, tomatoes and red pepper.
  3. Let simmer for 10 minutes, stirring occasionally.
  4. Once it begins to thicken add the remaining ingredients to the pan and simmer for an additional 5 minutes, then serve over rice of noodles.

  1. 1 Block Firm Tofu, Drained
Instructions
  1. Place fresh Tofu in a freezer bag.
  2. Freeze tofu brick in the bag overnight. (Remember, it will turn yellowish from the freezing process)
  3. Thaw completely. Place freezer bag in a bowl of hot water to speed up the process
  4. Press in TofuXPress unit for approximately 30 minutes.
  5. Slice into desired shapes.
  6. Baste with Barbecue Sauce or favorite marinade.
  7. Grill for 15- 20 min, flipping once browned and crispy on the outside.

  6. 1/2 C Scallions (chopped)
  7. 1/3 C Canned peas

  1. 1 Package Tofu
  2. 1/2 C Soy Sauce
Instructions
  1. Use your TofuXpress to press tofu for 1 hour.
  2. Cut the pressed tofu into 1/2 inch cubes.
  3. Return cubed tofu to the TofuXpress and cover with soy sauce. Let the tofu sit in the marinade while your oven preheats to 375 degrees.
  4. Spread the tofu on a baking sheet (use a silicon mat to avoid using oil)
  5. Bake for 25 minutes at 375 degrees, turning halfway through.
