Ingredients
  1. 3 cups fresh baby Spinach
  2. 1 brick Tofu Extra Firm
  3. 3 tablespoons Olive Oil
  4. 3 tablespoons fresh Parsley, coarsely chopped
  5. 2 tablespoons fresh Thyme, coarsely chopped
  6. 2 cloves Garlic, pressed or finely chopped
  7. Coarse Sea Salt
  8. Fresh Cracked Pepper
Instructions
  1. Press Tofu in TofuXpress for 2 hours. Remove Tofu and slice length-wise to yield two pieces of pressed Tofu.
  2. Preheat oven at 375 degrees.
  3. In a medium – large size baking dish (large enough for both Tofu pieces to lay directly onto dish), add Oil, Garlic, Parsley and Thyme. Coat herbs and with Oil. Place Tofu into dish and coat both sides with oil and herb mixture.

  1. 16 oz. (450 g) extra-firm or super firm tofu
  2. 2 T. (30 ml) light coconut milk
  3. 1 T. (15 ml) toasted sesame oil
  4. 1 t. (5 ml) agave syrup
  5. 1 t. (5 g) curry powder
  6. 1 t. (5 ml) vegan fish sauce or regular fish sauce
  7. 1 t. (5 g) grated fresh ginger
  8. 1 t. (5 g) sea salt
  9. 1 t. (5 g) minced garlic or garlic paste
  10. 1/2 t. (2 ml) liquid smoke
  11. 1/2 t. (2 g) turmeric
  12. 1/4 t. (1 g) cumin
  13. 1/4 t. (1 g) coriander
  14. 20 bamboo skewers or 10 long metal skewers

  1. 1/2 block Firm pressed/frozen/repressed Tofu
  2. 1 tbsp ‘Beef’ stock powder
  3. 1 tsp Braggs seasoning
  4. 1/2 tsp Pepper (fresh ground black)
  5. 1 tbsp Nuttelex
  6. 1/4 cup grated Cheezely Nacho Cheeze
  7. 1 cup Lettuce
  8. 1/2 cup Capsicum
  9. 4 slices Wholemeal Sourdough Bread
Instructions
  1. thinly slice tofu
  2. fry tofu with stock powder, seasoning & pepper
  3. assemble tofu & cheeze in bread
  4. butter/nuttelex the outsides of the sandwiches
  5. fry until golden
  6. add salad
  7. enjoy!

Ingredients
  1. 3 cups Fresh asian Noodles
  2. 1 cup julienne Carrot
  3. 1/2 cup Capsicum
  4. 1/2 block Firm Tofu (pressed)
  5. 1/4 cup Satay Sauce
  6. 1 tsp Chilli Mushroom Sauce
  7. 1 tbsp Soy sauce
  8. 1 tsp ‘Chicken’ stock power
  9. 1 clove Garlic
  10. 1 Fresh Red Chilli
Instructions
  1. Chop chilli, garlic, tofu, carrot & capsicum
  2. Soak noodles in a bowl of hot water
  3. Fry chilli, garlic & tofu until golden
  4. add carrot
  5. add noodles
  6. add stock powder, soy sauce, satay sauce & chilli mushroom sauce
  7. stir fry until combined well & carrots are almost tender
  8. add capsicum
  9. enjoy!

Scramble ingredients
  1. 6 tbsp nutritional yeast
  2. t tbsp dijon mustard
  3. 1 large block of fresh firm tofu
  4. 2-3 tbsp curry powder (to taste)
  5. 1 tbsp tomato paste
  6. 1 cup veggie stock
Vegetables
  1. (Makes 1 serving)
  2. 1 cup cooked frozen spinach
  3. 1 cup chopped brown mushrooms
  4. 1 tbsp chopped chives
  5. 1 tbsp chopped fresh oregano
  6. 1 cup curly cut carrots
Scramble preparation
  1. Crumble tofu into pan
  2. cook until tofu has shrunk significantly and is browning (depends on how big your block is, approximately 10 mins)
  3. add curry powder, mustard & nutritional yeast
  4. continue to cook until tofu returns to a brown (approximately another 5 mins)

  1. 15 oz Extra-Firm Tofu, pressed with TofuXpress for 30 minutes or more, drained, crumbled
  2. 1/4 cup nutritional yeast flakes
  3. 1 tsp Bragg’s Liquid Amino’s
  4. 1 TBS MatoZest or other tomato based no-salt seasoning
  5. 1 TBS fresh thyme (reserve 1 tsp for step 8)
  6. 1/2 TBS fresh rosemary (reserve 1/2 tsp for step 8)
  7. 1/2 tsp ground black pepper
  8. 1 onion, diced
  9. 4 oz mushrooms, diced

  1. Xfirm tofu brick (drained with your TofuXpress)
  2. 1 Brown Onion
  3. 2 TBS Chili Powder
  4. Avocado
  5. Diced Tomatoes ( w/salt and pepper)
  6. 1/2 cup of your favorite Salsa
  7. Gouda Cheese
  8. Hand made Corn Tortillas
  9. Vegetarian Refried Beans
  10. Fresh Romaine Lettuce
Instructions
  1. Dice Brown Onion and cook in olive oil
  2. Throw in tofu after forking it (looks like scrambled eggs)
  3. Add Chili Powder, and then salsa. Line heated tortillas with sliced Gouda Cheese. Add your cooked tofu mix and top with fresh diced tomato and Avocado. Serve with a slab of beans and Enjoy:)

  1. 1 block of extra firm tofu, pressed for 30 minutes or more, drained and cut into 6 large slices
  2. 1 cup marinara sauce
  3. 1 cup diced pineapple
  4. 1 cup Daiya Mozzarella Style Shreds
Instructions
  1. Press water out of tofu using TofuXpress for at least 30 minutes.
  2. Preheat oven to 400 degrees.
  3. Slice tofu into 6 pieces (cut to make the widest/thinnest slices possible).
  4. Lightly spray or oil a non-stick baking sheet.
  5. Arrange tofu pieces on the baking sheet and cook for 10 minutes.
