Ingredients
  1. 2 Cups Rice Krispies
  2. 1 Cup Crunch Peanut Butter or Cashew Butter
  3. ¼ Cup Protein Powder (we used Chocolate flavored Soy Protein)
  4. ¼ Cup Flax Seed
  5. ¼ Cup Raisins (coarsely chopped)
Equipment
  1. TofuXpress unit with Light Tension Spring
  2. Xpress Cheesecloth (cut to fit TofuXpress unit with enough room to also cover entirely food inside TofuXpress unit)
  3. Xpress Cutter
Instructions
  1. Melt Peanut Butter in a medium saucepan, enough to soften so that it will stir easily. Remove from heat. Add remaining ingredients directly into saucepan and stir to combine and coat Rice Krispies.

Ingredients
  1. 1 cup fresh Raspberries
  2. 1 cup fresh Blueberries
  3. 1 cup fresh Blackberries
  4. 1 tsp Arrowroot powder
  5. 1 tablespoon Agave
  6. 2 tablespoons Water
  7. fresh Mint leaves
Instructions
  1. Add berries into TofuXpress and press for at least 2 hours in refrigeration. Reserve all berry juice – do not discard!
  2. When there is some berry juice ready, pour off berry juice into a small saucepan. Add Agave. Heat till almost a boil. Add Arrowroot powder to thicken. Add water to adjust as needed, to create a slightly thick sauce.
  3. Turn off heat.
  4. Add berries only to coat with sauce.
  5. Place back into TofuXpress and press in refrigeration at least 2 hours in order to allow the mixture to gel together.

Ingredients
  1. u00bc cup sliced Almonds
  2. 1 cup fresh Rainier cherries, pitted, and halved
  3. 2 cups cooked White rice
  4. 2 tablespoons Mirin
  5. 2 teaspoons Almond flavor (Frontier brand, or Almond extract)
  6. 1 teaspoon water
  7. Salt
  8. Cheesecloth
Instructions
  1. Add Mirin, Almond flavor, and water into a small bowl. Stir to blend.
  2. Follow directions to cook rice. Do not cook rice till completely dry. Allow some moisture to remain so that the rice is still a bit sticky.
  3. Add almond slices and stir to allow the almonds to soften a bit (a few minutes).
  4. Add cherries and mirin mixture to pot and stir to distribute evenly. (You can add more flavoring to your taste.)
  5. Remove from heat.

Faux Almond Float

Almond Float is a popular Asian (I believe it’s Chinese) dessert, at least in Hawaii.nIt’s essentially a fruit cocktail with some floating cubes of almond-flavored gel.nOf course, the gel is usually a sugar and gelatin mix. So I thought, why not cut out some sugar and increase the protein by using tofu instead?

Ingredients
  1. 1 block silken tofu
  2. 1 ~14-oz can of fruit cocktail mix, mandarin oranges, or other favorite fruit in syrup (traditionally it’s syrup, but water or natural juices are okay too)
  3. -OR- equivalent fresh fruit and juice
  4. Approx 1/3 – 1/2 cup (depends on preference) amaretto flavoring syrup (I used Da Vinci brand sugar free Amaretto)
  5. TofuXpress with #2 (light tension) spring

Ingredients
  1. 2 cups Sour Cream (not low fat)
  2. 1/4 cup Raspberry Preserve
  3. 1/8 Cup Chopped Pecans
  4. Xpress Cheesecloth
Instructions
  1. Line TofuXpress unit with Cheesecloth and fill with Sour Cream. Using Light Tension Spring #2 Attachment, press Sour Cream for 4 hours or overnight.
  2. Blend Raspberry preserve with Pecans.
  3. Remove Sour Cream Cheese and place onto a dish. Spread Raspberry/Pecan topping and serve with crackers.

Ingredients
  1. 1 lb Silken Tofu (Nasoya brand)
  2. u00bc cup Brown Sugar
  3. 4 tablespoons Brown Sugar set aside for use after baking
  4. 2 tablespoons vanilla or plain Soy Milk
  5. u00bd teaspoon ground Cinnamon
  6. u00bd teaspoon Arrowroot
  7. u00bc teaspoon Orange Oil
  8. Orange Zest
  9. Cru00e8me Brulee Torch (Wegmans)
Instructions
  1. Press tofu in TofuXpress unit using the Light Tension Spring Attachment for 1 1/2 hours.
  2. Preheat oven to 375.
  3. Using a Food Processor or Mixer, combine Tofu, u00bc cup Brown Sugar, Soy Milk and blend for a few minutes. Add remaining ingredients, Cinnamon, Arrowroot, Orange Oil, and Orange Zest. Blend well.
  4. Pour mixture into Ramekins and place in oven for 20 minutes...
