  1. 1 lb extra firm tofu, pressed
  2. Marinade
  3. 3 tsp Thai red curry paste
  4. 1 tsp creamy peanut butter (organic preferred)
  5. 1 tsp lime juice
  6. 1/2 cup lite coconut milk (or 1/4 cup regular + 1/4 cup water)
  7. 1 tsp ginger, minced
  8. 1 tsp garlic, minced
  9. Sauce
  10. reserved marinade
  11. 1 tbsp creamy peanut butter (organic preferred)
  12. 1/2 cup lite coconut milk (or 1/4 cup regular + 1/4 cup water)
  13. 1 tbsp lime juice
  14. Coconut breading
  15. heaping 1/3 cup unsweetened shredded coconut
  16. 1-1/2 tbsp cornstarch
  17. 1-1/2 tbsp flour
  18. 1/4 tsp cayenne (optional, omit to keep this dish mild)

Ingredients
  1. 1 package extra firm tofu (preferably Nasoya brand)
  2. Canola spray oil
  3. 1 can coconut milk 12 oz
  4. 1 sweet onion, chopped
  5. 1 tomato, chopped
  6. 1/4 cup chopped walnuts or cashews
  7. 1-2 tbsp curry, to taste
  8. Fresh cilantro (4 tbsp chopped)
  9. Cayenne pepper
  10. Salt
Instructions
  1. Press tofu in TofuXpress for at least 3 hours.
  2. Remove tofu and cut brick into 1 inch cubes.
  3. Spray a large fry pan with canola oil and heat to medium.
  4. Place onions into pan and brown, careful to not burn.
  5. Add curry and coat onions. Heat for 1 minute.
  6. Add can of coconut milk and heat for 1 minute.
  7. Add tofu, tomatoes, nuts, and cilantro.
  8. Bring to a soft boil, reduce heat and allow to simmer

  1. 1 brick firm or extra firm Tofu
  2. 16 ounces Tomato Sauce, with tomato chucks (optional u2013 Add tomato paste to thicken)
  3. 2 cups Vegan Mozzarella Cheese
  4. 1 medium sweet Onion, sautu00e9ed (optional)
  5. 2 cloves Garlic, sautu00e9ed (optional)
Instructions
  1. Press tofu for 1 hour, using the TofuXpress.
  2. Cube Tofu into 1-inch cubes.
  3. Toss cubed Tofu into a non-stick casserole dish or baking pan (preferably deep enough to later add sauce and cheese).

  2. 2 zucchini, sliced
  3. 1 8-oz package of crimini mushrooms, sliced
  4. 4-5 cups loosely packed spinach
  5. 1 tomato, medium sized, sliced
  6. 1-2 tablespoons of olive oil
  7. 2 cloves of garlic, minced
  8. 1 teaspoon thyme
  9. 2 teaspoons Mrs. Dash or other favorite seasoning mix (if with salt, omit salt below)
