The Scramblers
  1. 1 package extra firm tofu, pressed for best results
  2. 2 zucchini, sliced
  3. 1 8-oz package of crimini mushrooms, sliced
  4. 4-5 cups loosely packed spinach
  5. 1 tomato, medium sized, sliced
  6. 1-2 tablespoons of olive oil
  7. 2 cloves of garlic, minced
  8. 1 teaspoon thyme
  9. 2 teaspoons Mrs. Dash or other favorite seasoning mix (if with salt, omit salt below)
  10. salt and pepper to taste

  2. In a large skillet on medium heat, cook vegetables in olive oil with all seasonings until dry. You might want to taste test for spice levels. Should be a bit strong since you will be adding it to un-spiced tofu in a bit.

  1. 1 package of extra firm tofu u2013 drained REALLY well, preferably with a TofuXpress
  2. flour
  3. salt & pepper to taste
  4. 1 cup long grain white rice
  5. 1 14 oz can vegetable broth
  6. u00bc cup white wine (or water)
  7. 3 carrots
  8. 1 potato
  9. 1 medium onion
  10. 2 cloves garlic
  11. 1 cup peas
  12. 1 cup broccoli
  13. soy sauce to taste, I used about u00bd cup
  14. worcestershire sauce to taste
  15. 1/2 cup white wine or veggie broth
  16. 2 Tbsp olive oil
  17. salt & pepper to taste

  2. 1 tablespoon water
  3. 1 teaspoon cornstarch
  4. 1 teaspoon sugar
  5. 1 tablespoon organic canola oil
  6. 1 pound asparagus, cut diagonally into 2-inch pieces
  7. 8 ounces extra-firm tofu, drained and cut into 1/2-inch cubes
  8. 2 garlic cloves, minced

  3. dash of balsamic vinegar

  3. u00bd sweet Vidalia Onion, sliced and halved
  4. 1 Apple, cored, sliced and quartered, with skin left on

  3. 3 tablespoons Olive Oil

  2. 1 tbsp ‘Beef’ stock powder
  3. 1 tsp Braggs seasoning
  4. 1/2 tsp Pepper (fresh ground black)
  5. 1 tbsp Nuttelex
  6. 1/4 cup grated Cheezely Nacho Cheeze
  7. 1 cup Lettuce
  8. 1/2 cup Capsicum
  9. 4 slices Wholemeal Sourdough Bread

  1. 3 cups Fresh asian Noodles
  2. 1 cup julienne Carrot
  3. 1/2 cup Capsicum
  4. 1/2 block Firm Tofu (pressed)
  5. 1/4 cup Satay Sauce
  6. 1 tsp Chilli Mushroom Sauce
  7. 1 tbsp Soy sauce
  8. 1 tsp ‘Chicken’ stock power
  9. 1 clove Garlic
  10. 1 Fresh Red Chilli
Instructions
  1. Chop chilli, garlic, tofu, carrot & capsicum
  2. Soak noodles in a bowl of hot water
  3. Fry chilli, garlic & tofu until golden
  4. add carrot
  5. add noodles
  6. add stock powder, soy sauce, satay sauce & chilli mushroom sauce
  7. stir fry until combined well & carrots are almost tender
  8. add capsicum

Scramble ingredients
  1. 6 tbsp nutritional yeast
  2. t tbsp dijon mustard
  3. 1 large block of fresh firm tofu
  4. 2-3 tbsp curry powder (to taste)
  5. 1 tbsp tomato paste
  6. 1 cup veggie stock
Vegetables
  1. (Makes 1 serving)
  2. 1 cup cooked frozen spinach
  3. 1 cup chopped brown mushrooms
  4. 1 tbsp chopped chives
  5. 1 tbsp chopped fresh oregano
  6. 1 cup curly cut carrots
Scramble preparation
  1. Crumble tofu into pan
  2. cook until tofu has shrunk significantly and is browning (depends on how big your block is, approximately 10 mins)
  3. add curry powder, mustard & nutritional yeast
  4. continue to cook until tofu returns to a brown (approximately another 5 mins)
