Ingredients
  1. 1 Brick Tofu (Firm or Extra Firm)
  2. 1 Large Tomato, diced
  3. ½ cup chopped Vidalia Onion
  4. ¾ Cup Salsa
  5. 1 clove fresh Garlic, minced
  6. 2 Avocadoes, diced
  7. 1 Tbsp Green Serrano chili Pepper, minced
  8. 1 Tbsp Red Fresno Chili Pepper, minced
  9. 2 Limes
  10. 15-20 sprigs Cilantro
  11. 1 Tablespoon Cumin
  12. 1 Tablespoon Coriander
  13. 1 Tsp Sea Salt Flakes (Maldon)
Instructions
  1. Press 1 brick Tofu in TofuXpress unit for 2 hours. Remove Tofu and slice into small strips approximately ½ inch by 1 inch.
  2. Chop 12-15 sprigs Cilantro, reserving remaining for garnish.
  3. In a small bowl, juice 1 Lime. Add Cumin, Coriander, and Sea Salt. Stir well and set aside.

Pockets
  1. 1 Large Brick of Tofu (Nasoya Brand Extra Firm)
  2. 1 C Panko Flakes
  3. Oil (for frying)
  4. Salt & Pepper (to taste)
Stuffing
  1. 1 C Chopped Sweet Onion
  2. 1 16 oz Package Frozen Spinach (defrosted)
  3. 1/4 C Chopped Mushrooms
  4. 3 T Parsley
  5. 1 t Cumin
  6. Remaining Panko Crumbs from Pockets
Instructions
  1. Press tofu in your TofuXpress for 4 hours, or overnight.
  2. Press thawed spinach in your TofuXpress (with the light tension spring) for 1/2 hour

  1. Here we used Dannon All natural Blueberry, 3.6 oz single servings. You can certainly use your favorite Soy Yogurt or Plain Yogurt and add fruit.
Instructions
  1. Line the TofuXpress Unit with TofuXpress Cheesecloth. Using the Light Tension Spring attachment (sold separately), press overnight. Pour off the whey or retain the whey for another recipe. Served here with Gluten-Free Melba Toasts.

Ingredients
  1. 1 package (brick) firm tofu
  2. 1/4 cup pesto (approx. 4 oz)
  3. 3 tbs olive oil
  4. 1/2 tsp salt
Instructions
  1. Place entire brick of Tofu in TofuXpress and press Tofu for a minimum of one hour, preferably two hours. Remove Tofu from TofuXpress and cut Tofu into 1 or 1 u00bd inch cubes. Place Tofu in bowl and add Pesto. Gently mix together and return to refrigerator for a 1/2 hour. Before serving, add olive oil and salt. Gently mix and serve. This may be made a day ahead.
  2. Serve room temperature or warmed.

Ingredients
  1. 1 Brick Tofu
  2. 1/4 cup Tomato Pesto
  3. 2 tbs Olive Oil
  4. Fresh Parsley
Instructions
  1. Place brick of Tofu into TofuXpress and allow to press for at least 3 hours or overnight. Dice Tofu into small squares and add Tomato Pesto and 1-2 tbs olive oil. (Add more Tomato Pesto if you prefer to achieve a consistency where the mixture starts to stick together and also consistently coats tofu. Place mixture into TofuXpress and allow to marinate for at least 2 hours or overnight. Use a crabcake cutter to form round pattie. Place onto plate, drizzle a teaspoon of olive oil onto side of plate, and add parsley garnish. Serve.

  1. 1/2 lb lean ground beef, pork or chicken
  2. 1 pkg (brick) firm tofu
  3. 2 tsp minced ginger
  4. 1 tsp minced garlic
  5. 2 cups shredded coleslaw, chopped
  6. 3 green onions, chopped
  7. 1 pkg egg roll wrappers
  8. canola oil
  9. 2 tbs teriyaki sauce
  10. plum sauce
Instructions
  1. Press Tofu in TofuXpress for 1 hour. Use a fork to smash the Tofu and create the texture of ground meat. Stir-fry meat and Tofu together in a skillet over high heat until meat is browned. Ingredients
  1. Tofu, pressed
  2. 1 Large Tomoato
  3. 10 Basil Leaves
Dressing
  1. 1/4 cup White Wine
  2. 1/4 cup White wine vinegar
  3. 1/3 tsp Salt
  4. Black Pepper
  5. 1/2 Garlic Clove
  6. 1/2 Fresh red chili
  7. 1 Tbsp Olive oil (EVO)
Instructions
  1. Press tofu in TofuXpress.
  2. Cut tofu into 1/4 inch thick slices.
  3. Slice tomatoes into 1/2 inch thick slices..
  4. Crush and mince garlic. Mix it with the wine vinegar, white wine, salt, pepper and chili.
  5. Cook in a pan until the lmixture has reduced to half. Let cool.
  6. Take tomatoes and tofu and add onion and olive oil. Mix well.
  7. Place tomatoes, tofu and basil alternately as shown in picture on a serving dish. Drizzle dressing on top.

  1. Miso soup (1 can or powdered packet or paste)
  2. 1 block of firm or extra firm tofu
  3. 1 green onion finely sliced
Instructions
  1. Place entire brick of tofu in TofuXpress and allow to press for 1/2 hour. Remove tofu from TofuXpress. Follow instructions provided on packaging to make Miso Soup. Bring Miso soup to a simmer or low boil. Dice tofu into u00bd inch cubes and place in miso soup. Add Green Onion. Allow to heat thoroughly for approximately 15 minutes.
  2. Serve hot.

  1. 1 brick extra firm Tofu
  2. 1 can Black Beans (Soy), drained and rinsed
  3. 3 tablespoons Peanut Oil
  4. 2 tablespoons Chili Sauce
  5. 2 tablespoons Organic Shoyu (naturally brewed Soy Sauce)
  6. 1 tablespoon Sesame Oil
  7. 3 stalks green onions sliced thinly
  8. Lime slices
Instructions
  1. Press Tofu in Tofuxpress for 3 hours. Slice Tofu lengthwise in 1-inch strips. Cut each strip in 3 pieces. Place into a bowl and add onions.
